My husband goes through alot of food whims… some days he wakes up and says “I don’t want to eat chicken anymore”… the next day he might say “No more carbs for me” or even “I would like to cut out wheat”. When he cuts something out, it means we can go back to eating what he previously cut so it’s not so bad, he keeps me on my toes!
This weeks declaration is “I don’t want anymore dairy” so, I went on a mission to cook a really nice no dairy pumpkin soup that BOTH he and I would enjoy.
YOU WILL NEED
- A blender (I have a thermochef SUCKERS!)
- 1 brown onion chopped
- 2 or 3 cloves of garlic pressed
- 1 teaspoon of wholegrain mustard
- 1 sliced spring onion
- 1 long red chilli (with the seeds! don’t be wimps)
- 2cm fresh ginger (or a heaped teaspoon of the crushed stuff)
- 1 tablespoon of coconut oil
- 500 grams of cubed pumpkin
- 750g vegetable stock
- 200g coconut milk
- 1 sprig of parsley finely chopped
Blend the crap out of your onion, spring onion, mustard, chilli, garlic and ginger, then sautè that delicious mix of smells in a big pot (or in your thermochef/mix/whatever) using your coconut oil till soft. Smell that shit, SO GOOD ALREADY RIGHT?!
Add pumpkin, stock and coconut milk to pot (or thermy mixing bowl) and cook for 15 mins, stiring occasionally (if in a thermy, cook 15 min/100˚C/speed 1).
Once your pumpkin is all cooked, put it all back in the blender and blend the crap out of it till its smooth (if your using a thermy, blend 1min/speed7).
Divide between bowls for you and your fussyass husband and enjoy!
Eating this soup made me so happy, the kinda happy like when your walking down the street and you see a bunch of kids getting mega splashed by a bus driving through a giant puddle. You know that smile you get on your face, like you just witnessed a miracle? Its like that… but in your mouth.
Wana kick things up a notch?! Fry some sliced bacon in a pan and add it to the top of your served soup, HOT DAYM its amazing!
